The Story
it started at 2am.
Couldn't sleep.
The craving hit, and nothing in the house was good enough.
So we made something that was.
Mixed a batch, no plan
Brown butter, dark chocolate, salt.
Gone by morning.
Spent the next week trying to get it back.
Then the month after. lost count after that.
Now every batch is numbered. made in small runs.
We don't bake every day, we bake when it's right.

low heat. keep going until it smells like something worth staying up for.

build the dough
everything by hand. you know it's right when it stops looking like effort.

rest
the dough rests. flavour develops. patience is the ingredient everyone skips.

bake. salt. ship.
